This is the first nice kitchen knife that I ever bought. I love it. Very good slicer, it's beautiful and the price is right. No complaints and it makes me happy.
I spent the week using the knife at work and my quick thoughts:
This knife is very tailored to rock chopping, almost shockingly so at first when you’ve gotten used to flatter profile Asian knifes and go in expecting more of that. Its curve excels at mincing herbs and fruit prep. But one unexpected bonus I found was it was quite good for light butchering work for a chef knife. It still won’t beat a dedicated tool for the job, but I cleaned quite a few tenderloins ribeye sections for steaks. It’s great for sliver skin removal and will work to slice off steaks in a pinch. I wouldn’t say the same for most of my chef knives both European and Asian.
Steel held up good and honed nicely.
